Ingredients

Cooking instructions

  1. Soak the dry chickpeas in cold water overnight and drain them.
  2. Do not boil the chickpeas.
  3. Roughly chop the onion.
  4. Peel the garlic.
  5. Rinse the parsley and the cilantro.
  6. Grind the chickpeas with the onion, garlic, parsley and cilantro until coarse.
  7. Add the flour, sesame seeds, salt and black pepper and mix well.
  8. Rest the mixture in the refrigerator for 20 minutes.
  9. Shape it into small balls and flatten them slightly.
  10. Heat the sunflower oil in a deep skillet over medium heat.
  11. Fry the falafel for 3 minutes per side until deep brown.
  12. Drain the falafel on paper towel.
  13. Serve warm with flatbread and a yogurt or hummus dip.
